How To Make This Cast Iron Cookie Skillet
To make this chocolate chip cast iron cookie recipe:
- Cream Butter and Sugars: start by creaming together room-temperature butter, brown sugar, sugar, vanilla, an egg, and one egg yolk in a large mixing bowl. Mix with an electric mixer or in the bowl of a stand mixer with paddle attachment until everything is well combined. The sugar should be mixed in well and the butter will be fluffy and smooth, this will take about 2 minutes.
- Add the Dry Ingredients: Next, sift in the dry ingredients. I like to place a wire mesh strainer over the top of the bowl containing the butter, then place the flour, salt, and baking soda into the strainer. Tap the side of the strainer to sift the flour mixture into the butter mixture.
- Combine the Wet and Dry Ingredients: use the electric mixer to mix the dry ingredients into the wet ingredients until well combined. Use a spatula to scrape down the sides of the bowl as needed to incorporate all the ingredients into the cookie dough.
- Don’t Forget the Chocolate: Lastly, mix in the chocolate chips until they are well distributed throughout the dough. I like to mix with the electric mixer, or you can fold them in with a spatula if you prefer.
- Prepare the Skillet Cookie for Baking: Press the chocolate chip cookie dough into a 12-inch cast iron skillet. Press the dough evenly into the pan so the cookie will bake evenly. The pan does not need to be preheated before placing the dough into the pan. Sprinkle a few extra chocolate chips over the top of the dough before baking.
- Bake Chocolate Chip Cast Iron Cookie: bake in a 375º F oven for 20 minutes, until the edges are golden brown. The center will still be soft and warm and ooey-gooey!
