How to make Beef and Broccoli Stir Fry
To make this beef and broccoli stir fry, start by slicing a flank steak into thin, 1-1.5 inch long pieces. The pieces should be pretty thin, this helps them cook quickly. When slicing the steak, slice against the grain so that the steak will be nice and tender when you are eating it.
Chop up 2 broccoli florets into small, bite sized pieces by slicing off the stem and then using a sharp knife to cut the heads into smaller pieces. This can even be done by hand by pulling the broccoli off into small pieces.
Slice 3 green onions starting from the bottom. Separate the green part from the white stem of the onion. The white parts of the onion will be used in this first cooking portion of the recipe.
Heat a large (12 inch) skillet over medium high heat. Pour in 2 tablespoons of vegetable or canola oil (or any oil you prefer to cook with.
While the pan is heating toss the sliced flank steak pieces with the cornstarch until they are all coated. Add the steak to the pan and cook and stir for 2-3 minutes, just until brown. It will not be fully cooked through at this point.
Add in the sliced green onions and broccoli. Continue to cook and stir an additional 5-10 minutes, until the steak is cooked through and the broccoli has become tender.
The broccoli should still have a little crunch to it, so don’t worry if it is not completely soft.
Combine the ingredients for the stir fry sauce and pour over the cooked beef and broccoli. Bring the sauce up to a simmer and stir and cook for 2-3 more minutes, until the sauce has began to thicken. The corn starch that is on the beef will help to thicken the sauce.
Sprinkle the green portions of the sliced green onions over the top of the cooked beef and broccoli, add sesame seeds if desired. Serve immediately over cooked rice or even rice noodles. There will be extra sauce for drizzling over the rice!
