How to Make Cast Iron Peanut Butter Brookie Recipe
Make the Brownie Batter
- Melt the Butter– melt the butter in the microwave for 30 seconds, or until melted. Quickly stir the chocolate chips with the melted butter until the chocolate melts and is smooth.
- Combine Egg and Sugar– combine the eggs sugar and vanilla until blended, then add in the melted butter and chocolate.
- Add the Dry Ingredients– add the flour, cocoa, and salt into the butter mixture and stir until a soft batter is formed.
- Spread the Brownie Batter– spread the brownie batter evenly into the greased 12 inch cast iron skillet.
Make the Peanut Butter Cookies
- Cream butter– cream together the softened butter, peanut butter, sugar, brown sugar, egg, and vanilla until well combined.
- Add dry ingredients– add the flour, salt and baking soda and combine until a soft cookie dough is formed.
- Scoop the cookies– use a small cookie scoop or spoon and make small (about 2 teaspoons) round cookies, smash the cookie dough into a small circle, then use a fork to press in a cross pattern on each cookie before placing on top of the brownie batter.

Brownie Batter
- Melt the 1/2 cup butter in the microwave, add the 1 cup semi sweet chocolate chips and stir until the chocolate chips are melted.
- In a separate bowl combine the 1 cup sugar, 2 eggs, and 1/2 teaspoon vanilla. Stir in the melted chocolate.
- Add the 2/3 cups flour, 1/3 cup cocoa, and 1/4 teaspoon salt and stir until a soft batter has formed. Spread the brownie batter into a greased 12 inch cast iron skillet.
Peanut Butter Cookies
- In a mixing bowl, cream together the 2 tablespoons peanut butter, 2 tablespoons butter, 2 tablespoons sugar, 2 tablespoons brown sugar, 1/2 egg, and 1/4 teaspoon vanilla.
- Add in the 3/4 cups all purpose flour, 1/8 teaspoon salt, and 1/2 teaspoon baking soda until a soft cookie dough is formed.
- Scoop out 2 teaspoons sized cookie dough and flatten into a small circle, then press a criss cross with a fork into the top of the cookie, then place the cookie on top of the brownie batter in the skillet.
- Bake the skillet cookie for 20-25 minutes, until a toothpick comes out clean and the cookies are browned on top of the brownie. Allow to cool before slicing.
