I have a true love for a good buttermilk biscuit cooked in a cast iron skillet, it’s actually a Sunday tradition at our house. So the other day I was thinking about a good slice of my sweet cornbread and thought why not make biscuits with cornmeal, and let me tell you these cornbread biscuits DO. NOT. DISAPPOINT!!

Here is what you will need to make this easy cast iron recipe for Cornbread Biscuits:

  • butter– the secret to fluffy biscuits is cold butter. The cold butter creates pockets inside the biscuits while also creating the crispy outside.
  • all purpose flour– the base for these soft, buttery biscuits
  • cornmeal-here to add that classic cornbread flavor plus a little crunch
  • baking powder– makes the biscuits tall and fluffy
  • salt– here for flavor and to balance out the sweet
  • sugar– just a touch of sweetness

How to Make Cast Iron Skillet Cornmeal Biscuits

Make the Biscuit Dough

  1. Combine the dry ingredients-in a large mixing bowl combine the flour, cornmeal, baking powder and salt.
  2. Add the butter– use a cheese grater to grate the cold butter into the biscuit mix

  1. Pour in the buttermilk– pour the buttermilk into the center of the dry ingredients and mix together until a soft, slightly sticky dough is formed.
  2. Roll out and cut– roll out the cornbread biscuit dough to about 1/2 to 3/4 of an inch thick and slice with a biscuit cutter or round drinking class.

  1. Bake– in a 425º F oven bake the biscuits for 12-15 minutes until puffed up and golden.

How to Store

While these are always best served right out of the oven, you can store cooled biscuits in an air tight container on the counter for up to 3 days.

These can also be frozen for up to 3 months.

Ingredients

  • 2 cups all purpose flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 1/2 cup butter cold
  • 1 cup buttermilk cold

Instructions

  • Combine the dry ingredients-in a mixing bowl mix together the 2 cups all purpose flour, 1 cup cornmeal, 1 tablespoon baking powder, 1 teaspoon salt, and 2 tablespoons sugar
  • Add the butter– using a cheese grater, grate the cold 1/2 cup butter into the dry ingredients and toss to coat with the flour mixture.
  • Pour in the buttermilk-pour the cold 1 cup buttermilk into the center of the dry ingredients and mix together with a wooden spoon until a soft, slightly sticky dough is formed.
  • Roll and Cut the Dough-place the biscuit dough onto a lightly floured surface and roll out until it is about 1/2-3/4 inch thick. Cut the biscuits into rounds until 10-12 biscuits are cut.
  • Bake- bake in a 425º F oven for 12-15 minutes until puffy and golden brown
