- 9-inch cast iron pie pan– this is the pan that I use for this recipe
- 9-inch pie pan– a regular pie pan, or round pan that can be baked in the oven will work for this recipe as well.

This is all you will need to make this tortilla egg bake recipe exactly the way that I did. It takes just a few simple ingredients to make the breakfast magic happen. Here is what you will need:
- Large Tortilla– a burrito-sized tortilla works best
- Salt and Black Pepper
- Garlic Powder
- Lowfat Cottage Cheese
- Mild Cheddar Cheese
- Red Pepper
- Spinach
- Eggs

How to Make Tortilla Egg Cottage Cheese Bake
Now that we’ve got all the ingredients and other ways you can mix this up if you like, let’s talk about how to make this simple cottage cheese egg bake recipe.
- Slice the red peppers– slice the red pepper into small, bite-sized pieces, about 1/2 inch.
- Beat the eggs– in a large mixing bowl, beat the eggs until they are fluffy, and season with salt, black pepper, and garlic powder.
- Add in the cottage cheese, cheese, and spinach– tear the spinach leaves into smaller pieces and fold into the eggs.
- Place the tortilla into the prepared pie pan– grease a 9-inch pie pan and place the tortilla into the pan, it’s okay if the tortilla folds up around the sides a bit.
- Bake– once everything is assembled, bake in a 350º F oven for 20-25 minutes.
How to Store Leftover Egg Bake
If you don’t happen to eat this whole egg bake in one sitting, you can store the leftovers in an air-tight bag for 1-2 days. To reheat, I suggest putting it into an air fryer or back into the oven at 350º F for 5-7 minutes. This can also be reheated in the microwave, but won’t be as crisp.

Ingredients
- 1 large tortilla burrito size
- 3 eggs
- 1/4 tsp salt
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 cup lowfat cottage cheese
- 1 cup spinach torn into small pieces
- 1/4 cup red pepper diced into 1/2 inch pieces
- 1/4 cup mild cheddar cheese shredded
Instructions
- Preheat oven to 350º F and grease a 9-inch pie pan with cooking spray.
- In a mixing bowl, beat the eggs with the salt, black pepper and garlic powder until fluffy.
- Add in the red peppers, spinach, cottage cheese, and cheddar cheese, mix until well blended.
- Place the tortilla into the prepared pie pan and press into the bottom. Pour in the egg mixture evenly into the tortilla.
- Bake for 20-25 minutes, until the cheese is melted and tortilla is golden brown
