This breakfast overnight casserole is simple to add in different ingredients to up the vegetables or switch up the proteins for additional flavors.

How to Make Overnight Breakfast Casserole

The steps to making the best overnight breakfast casserole are very simple. Start by whisking together the eggs, milk, dry mustard, garlic powder, salt and pepper until the eggs are fluffy and bubbly.

Next, add the sliced bread to a greased 9 x 13 inch baking dish and sprinkle the chopped ham and onions over the bread.

Then pour the egg mixture all over the bread, pressing the bread into the eggs as needed to make sure everything is saturated.

Now you can over with plastic wrap and refrigerate overnight, until you are ready to bake!

Refrigerating the casserole overnight will help the bread absorb the eggs and all the flavors combine.

What Kind of Bread is Best in Breakfast Casserole?

When making an overnight breakfast casserole, I prefer to use a nice, thick loaf of bread. Something like a french bread, this dutch oven bread or a brioche loaf.

If you don’t have the thicker loaves, a sandwich bread will work as well.

Overnight Breakfast Casserole

Easy overnight breakfast casserole made with bread, ham and eggs for a simple, filling breakfast.

Ingredients

  • 1 loaf French bread cut into 1 inch cubes
  • 10 eggs
  • cups milk
  • ½ bunch green onions, sliced
  • 1 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup ham or cooked sausage diced
  • 2 cups shredded sharp cheddar cheese

Instructions

  • In a large mixing bowl, whisk together eggs, milk, dry mustard, garlic powder, salt and pepper.
  • Add cheese to egg mixture and stir to combine.
  • Place bread pieces into greased 9 x 13 inch baking pan. Sprinkle in ham and onions over the bread
  • Pour egg mixture over the bread, ham and onions, pressing the bread into the eggs to make sure it is all saturated.
  • Cover with plastic wrap and refrigerate overnight.
  • Bake, covered with foil, at 325℉ for 45 minutes, then remove foil and bake for an additional 15 minutes, until golden brown on top.

Notes

  • Nutrition Facts are just an estimate
  • Can also be prepared and then frozen after baking. Cover tightly and freeze for up to three months. Place in the refrigerator overnight to thaw and then bake at 325ºF for 30 minutes, covered, until cooked through. 
  • If making the same day, make sure the bread is saturated and bake as directed.
