Peach Galette is fresh fruit piled high in the center of a pie crust and then the crust is folded around the edges making almost like a peach pizza pie. Making a galette is so simple and takes a lot less time than making a whole pie, with the same flavor.
Peach Galettes are a perfect, quick dessert idea. You can’t beat the flavors of a fresh peach pie topped with vanilla ice cream. We can’t ever wait for this to cool completely before we start digging in, it is worth every tongue scorching bite.
Galettes are so simple to make with whichever fruit is in season. These are perfect for serving to guests, the look so fancy and like you spent a long time putting this dessert together, when in reality, you can put this together pretty quickly.
How to make Peach Galette
There are just a few simple steps to make this easy recipe for a Peach Galette. A short cut I like to take is to use a store bought pie crust, it just cuts down on the prep time, making pie time come a whole lot faster. No special pans are needed as this is baked right onto a baking sheet.
Start by peeling and slicing about 3 medium sized yellow peaches, you will want about 2 1/2 to 3 cups of yellow peaches. Slice the peaches thinly so they will cook and become softened in the time it will take to bake the crust.
Toss the peaches with the sugars, cinnamon, salt and cornstarch. Place the pie crust onto a parchment lined baking sheet and pile the peaches into the center of the crust, leaving about 1 1/2 inches from the edges. Carefully fold the edge towards the center of the pie and give it a little crease on the side of the last fold you just brought up. Pinch these together as you go.
Brush the pie crust with the egg, milk mixture and bake for 15 minutes, if needed place strips of foil around the edges of the pie if you feel they are getting too crisp. Bake for an addition 10-15 minutes, until the filling is bubbly and the crust is golden brown.
How to keep the crust from going soggy on a galette?
Fresh peaches can release a lot of extra juices when they are cooked. The best way that I have found to avoid extra juices is to get the peaches onto the crust and into the oven as quickly as possible. Leave any extra juices that are in the mixing bowl in the bottom, you won’t need that extra moisture.

Peach Galette
Ingredients
- 3 cups thinly sliced yellow peaches
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 tsp cinnamon
- pinch of salt
- 3 tbsp corn starch
- 1 9 inch pie crust
- 1 egg
- 1 tbsp heavy cream
Instructions
- Preheat oven to 450ºF. Line a baking sheet with parchment paper.
- Toss thinly peeled and sliced peaches with sugars, cinnamon, salt and corn starch
- Place pie crust onto the baking sheet. Fill the center of the pie crust with the peach mixture, leaving 1 1/2 inches from the outside edge of the crust.
- Carefully fold in the edge of the crust, folding and pinching down as you go around, keeping the peaches in the center
- Mix together the egg and the cream and brush a little on the folded crust. Sprinkle with extra sugar
- Bake for 25-30 until the crust is golden and the filling is bubbly and cooked down. Allow to cool for 15-20 minutes before serving.

Can I make a Galette with Frozen Peaches?
You can use frozen peaches in this peach galette recipe. To make this recipe with frozen peaches, allow the peaches to thaw completely and discard any excess juice. Follow the recipe as directed once the peaches have thawed.
