These simple Philly Cheesesteak Stuffed Peppers are perfect for a low carb, busy night. We like to make these with any variety of bell peppers. Flank steak is usually an inexpensive option for beef, if you prefer, you can use ground beef in place of the flank steak.

How to make Philly Cheesesteak Peppers

This recipe is perfect for a beginner cook or even an expert. To make this recipe, start by prepping the peppers. Slice to top and stem off of the peppers, remove any seeds and ribs from the inside of the peppers. 

Slice the flank steak into bite sized pieces. Cook the flank steak in a large pan over medium high heat with olive oil for 3-4 minutes, until cooked through. Remove the steak from the pan to a clean dish. 

Place the sliced onion and mushrooms in the same pan and cook until they are soft and the onion is translucent. This should only take another 3-4 minutes of cooking time. 

Add the steak back into the pan with the onion and mushrooms and season.

Fill your cleaned out peppers to the top with the beef, onions and mushrooms. Pile pieces of Provolone cheese on top of the peppers. 

I found that it was best to tear the cheese into pieces and place them on top of the meat and pepper. If you place the whole piece of cheese on top with it sticking out over the edges, the cheese will just melt and fall onto the pan. 

Place the stuffed peppers on a baking sheet and place in the oven for 15-20 minutes, until the cheese is bubbly, golden and melted and the pepper is soft.

Simple Ingredients for Philly Steak Stuffed Peppers

  • Flank steak- flank steak is a perfect cut for this simple meal. It is fairly cheap and cooks quick. Just slice the flank steak into bite sized pieces before cooking. Ground beef can absolutely be a substitute if needed. 
  • bell peppers-any color or variety
  • onion-a sweet onion is a great option. Simply slice the onion into thin strips so it will cook quickly and won’t overpower the stuffing. 
  • mushrooms-button or cremini mushrooms work great in this recipe
  • garlic powder
  • Worcestershire sauce
  • salt and pepper

Tips for making Philly Cheesesteak Stuffed Peppers

  • when picking out peppers, try to find peppers that are even and stand up on an even bottom
  • if you find that your peppers won’t stand, simply roll up some foil and place it around the bottom of any pepper that might be lopsided or falling over. 
  • you can tell when your peppers are done cooking, by poking with a fork to see if the skin has become soft. 
  • if you want the cheese to be more golden on top, you can place the peppers under the broiler in your oven for 2-3 extra minutes

Ingredients

  • 6 bell peppers, any variety
  • 1 1/2 pounds flank steak, sliced into bite sized pieces
  • 1 sweet onion
  • 8 ounces mushrooms, diced
  • 2 tbsp olive oil
  • 3 tbsp Worcestershire sauce
  • 1 1/2 tsp garlic powder
  • salt and pepper
  • 8 slices provolone cheese

Instructions

  • Preheat oven to 400ºF
  • Slice the tops off of the peppers and clean out the seeds and ribs from the inside of the peppers.
  • Season flank steak pieces with salt and pepper. Pour olive oil into a skillet over medium high heat. Cook flank steak in the skillet for 3-4 minutes until it is cooked through.
  • Remove the flank steak from the pan to a clean dish. Place the onions and mushrooms into the pan and season with salt and pepper. Cook and stir until onions are translucent and mushrooms are soft.
  • Add the steak back to the pan with the onions and mushrooms. Pour in the Worcestershire and garlic powder. Stir to make sure everything gets seasoned.
  • Stand the pepper up on a baking sheet. Fill each pepper with some of the steak, onion and mushroom mixture.
  • Top each pepper with torn pieces of the provolone cheese.
  • Bake in the oven for 15-20 minutes, until the cheese is golden, melted and the peppers are soft.
  • Remove from the oven and enjoy!

Notes

  • To check if the peppers are done, simply poke one with a fork to make sure it is tender. 
  • If you would like the cheese to be more golden on top, place it under the broiler in your oven for 2-3 minutes 
  • Lean ground beef can be substituted for the flank steak in this recipe
