Easy Spinach Salad

We love this simple spinach salad recipe because it is so easy to make for a side dish or add your favorite protein (chicken, steak, pork or fish) to make it a meal. Made with a tangy apple cider vinegar dressing, this spinach salad comes together perfectly.

Salads like this spinach apple salad are perfect for bringing along to family get togethers and holiday parties. I love having a simple throw together salad recipe like this one in by back pocket for a quick lunch recipe or dinner side dish.

Making Spinach Salad Ahead

This salad is simple to gather all the ingredients ahead of when you will be serving it and then tossing it together. To make spinach salad ahead, wash and tear up the greens and store in the refrigerator in an air tight container.

Assemble the apple cider vinaigrette and store in a container with a lid in the refrigerator.

About 10 minutes before serving this salad, toss together the sliced apples, red onions and dried cranberries with the dressing and let marinade. Toss together the remaining salad ingredients and then add in the marinated apples, onions and dried cranberries and any remaining dressing.

Spinach Apple Salad Variations

This salad is absolutely delicious as it is written, but it is so easy to mix up with different variations.

  • Change up the greens: green leafy lettuce or just a package of spring mix works great in this salad.
  • Try a different apple: Honeycrisp, red delicious and gala are some of my favorites
  • Another nut: pecans are delicious, however almonds or walnuts are tasty too
  • Choose another cheese: Asiago goes great with fruit, shaved parmesan or even a goat cheese would be delicious.
  • Add in a protein: add some sliced chicken, steak, bacon or even salmon

Spinach Apple Salad

Spinach Apple Salad is an easy salad tossed with just 6 delicious salad ingredients and a simple homemade salad dressing.

Ingredients

  • 4 cups torn spinach and mixed greens
  • 2 small Gala apples thinly sliced
  • ¼ cup chopped pecans or other nut of choice
  • ¼ cup red onion thinly sliced
  • ¼ cup feta cheese crumbles
  • ¼ cup dried cranberries

Dressing

  • 2 tablespoons apple cider vinegar
  • 2 tablespoons avocado oil
  • ¼ teaspoon salt
  • 1 teaspoon dijon mustard
  • 2 teaspoons honey
  • ¼ teaspoon black pepper

Instructions

  • In a medium sized mixing bowl whisk together the apple cider vinegar, oil, salt, dijon mustard, honey and black pepper until well combined.
  • Add the apples, sliced onions and cranberries to the dressing, cover and let stand for at least 10 minutes.
  • In a serving bowl, toss together the greens, apples and dressing mixture then toss in the pecans and feta cheese crumbles. Serve immediately.
