This is a great way to get in some extra veggies. The kids will always eat them if they are on the spoon with a noodle filled with cheese.
Vegetable tortellini soup is perfect for family parties or those times you have to bring a sick friend a meal! This soup is so comforting and definitely filling.
How to make Easy Tortellini Soup Recipe
This soup takes just few steps to make, it really comes together so fast. Let’s walk through the steps with a few tips to make this flawless every time.
Step 1: start by preparing the vegetables. Dice one yellow onion into small pieces, slice baby carrots into thirds and slice 2 celery stalks into slices.
You will also need 2 garlic cloves, minced. You can use pre-chopped garlic from the store or mince the garlic yourself. I find it easiest to use a garlic press when cooking with garlic.
Step 2: in a large pot or dutch oven, heat olive oil over medium heat.
Add in the onion, carrots and celery. Cook and stir about 2-3 minutes, until the onion starts to get tender.
The carrots will take longer to cook, but those will continue to cook as you add ingredients.
Add in the garlic and Italian seasoning and continue to cook and stir for another minute.
Step 3: at this point, you are ready to make the broth for the soup.
Pour in the cans of diced tomatoes, chicken broth and season with salt and pepper. Turn up the heat and bring this to a boil.
Step 4: Add the tortellini and cook according to package instructions.
Tortellini usually cook pretty quickly, these will only need to boil for about 5 minutes, depending on the kind of tortellini you are using. Tortellini are done when they are floating and the noodles are soft.

How to Store Cheese Tortellini Soup
To store leftovers of this tortellini soup recipe, place the soup into an air tight container and refrigerator for up to 4 days. The pasta will absorb more of the liquid, but this soup is still delicious the next day.
Reheat in the microwave until heated through.
This recipe for tortellini soup can also be frozen in an air tight container for up to 3 months. Thaw in the refrigerator over night, the microwave or over low heat on the stove, stirring frequently.
Add ins
This soup is delicious as written, but you can add in a few other ingredients to make it your own. I would suggest the following:
- Italian sausage or ground beef– brown just before adding in the onions
- chicken– shredded from a rotisserie chicken, leftover chicken or even canned chicken will work, add with the tortellini
- other vegetables– such as spinach, zucchini or broccoli

Tortellini Soup Recipe
Ingredients
- 4 cups cheese tortellini (20 ounces)
- 1 can (14.5 ounces) diced tomatoes
- 2 cans (14.5 ounces) chicken broth
- 1 yellow onion, chopped
- 1 1/2 cup baby carrots, cut into thirds
- 2 celery stalks, sliced
- 2 garlic cloves, minced
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
- In a 4 quart pot or dutch oven over medium heat, pour in olive oil. Add chopped onions, celery and carrots. Cook and stir 2-3 minutes until tender.
- To the pot add garlic and Italian seasoning and stir until fragrant, one minute more.
- Pour in the chicken broth, tomatoes and season with salt and pepper. Turn up the heat to high. Bring to a boil.
- Add the cheese tortellini and cook according to package instructions.
