Easy Lemon Bars
If there was ever a day where I had to chose which dessert was my favorite, it would be Lemon Bars. These are my go to treat, I just love the buttery crust and the lemon flavor bursting from the custard. If ever I see a lemon bar at a cafe of restaurant, you better believe that is what I am going to order.
When it comes to a Lemon Bar, the crust to custard ratio needs to be perfect. If the crust is too thick, it just makes the lemon bar taste dry and pretty tasteless. If the custard is too thick, the flavors can be overpowering! It just takes a few simple steps to make these delicious lemon bars. Start the recipe by making the crust.
Crust:
- To make the crust: combine together flour, cold butter and powdered sugar. Cut the butter into the flour and powdered sugar mixture until it resembles fine sand. This can be done easily by grating the butter with a cheese grater, cutting it in with 2 knives, using a pastry cutter or even the back of a fork.
- Bake the crust in a 350º F oven for 15 minutes
Lemon Custard:
- For the lemon topping, whisk together eggs, sugar, lemon juice, lemon zest and baking powder until bubbly and smooth, about 2 minutes.
- When the crust is done cooking, remove it from the oven and pour the lemon mixture evenly over the top.
- Bake for an additional 25 minutes. Allow to cool completely before slicing and serving
How to Store Lemon Bars
If you happen to have any leftover Lemon Bars store covered loosely with plastic wrap in the refrigerator for up to 3 days. If you need to store them for longer, they can be frozen for up to 3 months.
Slice and carefully place each square into a zip top bag before placing into the freezer.

Lemon Bars Recipe
Ingredients
Crust
- 2 cups all purpose flour
- 1/2 cup powdered sugar
- 1 cup butter, cold
- 1/4 tsp salt
Lemon Custard
- 4 eggs
- 2 cups sugar
- 4 tbsp lemon juice
- 2 tsp lemon zest
- 1 tsp baking powder
Instructions
- Preheat oven to 350º F and grease a 9 x 13 inch baking pan with cooking spray
- In a large mixing bowl combine the flour, powdered sugar and salt. Cut in the cold butter until a fine sand like mixture is formed.
- Press into the prepared baking dish
- Bake the crust for 15 minutes.
- While the crust is baking, in a clean mixing bowl, whisk together the eggs, sugar, lemon juice, lemon zest and baking powder until well combined and fluffy. This will take about 2 minutes and can be done by hand or with an electric mixer.
- Remove the crust from the oven and evenly pour the lemon custard over the top of the crust. Bake for an additional 25 minutes until the center is set.
- Remove from the oven and allow to cool for at least an hour before slicing. Dust with additional powdered sugar.
