Oatmeal Chocolate Chip Skillet Cookie

One of my favorite cookie recipes that I am making on repeat is this peanut butter skillet cookie, baked in a cast iron pan, it is always a huge hit. It has the same delicious, gooey cookie center and crispy crust as this Oatmeal skillet cookie.

Oatmeal chocolate chip cookies are so good, but making them into a skillet cookie is next level. Add a scoop of vanilla ice cream or homemade whipped cream for a simple dessert the whole fam will devour.

Cast iron makes the best cakes and giant skillet cookies while also giving that rustic charm, like cooking in grandma’s kitchen.

Cast iron skillets are for more than just making the perfect steak. They are great for making all kinds of simple cast iron desserts like this oatmeal skillet cookie, or even this peanut butter skillet cookie.

Cast iron is known for its even heat distribution, helping to make the perfect crunchy outer crust all over the outside of the cookie.

Additionally, the beautiful non-stick surface means the cookie will easily be released from the pan and makes cleanup a breeze. Got to love that!

Can I Bake this Skillet Cookie without a Cast Iron Pan?

Yes!! This recipe can be baked in a 9 x 13 inch baking dish.

  1. Grease the dish with butter or cooking spray.
  2. Pour in the dough and spread evenly.
  3. Bake as directed (check doneness with a toothpick).

Ingredients You’ll Need

  • 1 cup butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 eggs
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups all purpose flour
  • 2 cups rolled oats-regular not quick oats add the best texture
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 cups chocolate chips

How to Make Oatmeal Chocolate Chip Cookie In A Cast Iron Skillet

Combine The Wet Ingredients

  • in a large mixing bowl combine together the butter, sugar, brown sugar, eggs, and vanilla. Use an electric mixer, stand mixer or wooden spoon to blend all of the wet ingredients together until they are well combined.

Mix in the dry ingredients

  • to the butter mixture add the flour, rolled oats, baking soda, baking powder, salt, and cinnamon. Use the electric mixer to combine the dry ingredients with the wet ingredients. Scrape down the sides of the bowl as needed while mixing.
  • fold (this just means, folding the edges of the cookie dough into the center over the chocolate chips until they are mixed in) the chocolate chips into the batter with a sturdy spatula or wooden spoon.

Spread Cookie Dough In The Skillet And Bake

  • evenly spread the prepared oatmeal cookie dough into your greased skillet. Bake the skillet cookie for 20-25 minutes. The edges of the cookie will be browned and the center will not jiggle if you shake the pan.
  • let the cookie cool in the skillet for 10 minutes before digging in, or not, just beware it will be hot!

  • Room temperature: store on the counter in an airtight container for 2-3 days
  • Refrigerator: store in the refrigerator in an airtight container for 4 days
  • Freezer: freeze slices of this oatmeal cookie for up to 4 months

What Type of Oats Work Best?

Regular rolled oats work best because they are thicker and hold their shape when baked. Quick oats can be used if that is what you have on hand, just note the texture will be different than what is shown.
