How to Make Butter Swim Biscuits in a Cast Iron Skillet
Melt the Butter
- Preheat the Oven-preheat the oven to 450º F, place the cast iron skillet with 1 cup of butter into the oven and melt the butter as the oven heats up.
Make the Biscuit Dough
- Make the Dough– in a mixing bowl, combine the flour, baking powder, sugar, salt, and buttermilk. Mix everything together until a wet dough is formed and all of the ingredients are incorporated.
Prepare for Baking
- Bake-spread the biscuit dough into the 10.25 inch cast iron skillet with the melted butter. Use a rubber spatula or wooden spoon to spread the dough in the pan. Use a sharp knife or pastry cutter to cut the biscuits into 10-12 slices.

Ingredients
- 1/2 cup butter
- 2 1/2 cups all purpose flour
- 4 teaspoons baking powder
- 1 tablespoon sugar
- 1 1/2 teaspoons salt
- 2 cups buttermilk
Instructions
- Preheat oven to 450ºF. Add 1/2 cup butter to a 10.25 inch cast iron skillet and place in the oven until the butter is melted, 1-2 minutes.
- Make the dough-in a mixing bowl, combine the 2 1/2 cups all purpose flour, 4 teaspoons baking powder, 1 tablespoon sugar, 1 1/2 teaspoons salt, 2 cups buttermilk and mix with a wooden spoon until a wet dough is formed.
- Prepare for baking– spread the biscuit dough into the skillet with the melted butter. Use a spatula or wooden spoon to spread the dough into the bottom of the pan. Cut the dough into 10-12 square biscuits with a sharp knife or pastry cutter.
- Bake– bake the biscuits in the oven for 20-15 minutes until golden brown and crisp on the edges. Allow to cool for a few minutes before serving.
