Homemade Green Bean Casserole in Skillet
This classic holiday side dish recipe is an oldie, but a goodie!! This is not your typical canned mushroom soup and beans casserole. This recipe starts with fresh ingredients that are so simple to get and add so much more flavor to this recipe!! Don’t just save this one for the Thanksgiving menu, this is so good, you will want to share it year round.

No special ingredients are required to make this delicious green bean side dish. This all that you need to make this simple recipe:
- Fresh Green Beans
- Chopped onion
- Fresh, sliced mushrooms
- Butter
- Spices
- Milk
- Shredded Swiss cheese
How to make Fresh Green Bean Casserole
This green bean casserole is actually so simple to make and you will love the flavor from the homemade cream of mushroom soup. To start, prepare the green beans. Slice off both ends of the beans and slice the beans in half.
Start by cooking the green beans just until soft and remove from the pan to a separate bowl. Drain the water and then you can use the same pan to make the mushroom cream sauce. I like to cook this all in the same pan, I use an enameled cast iron that can go from the stovetop to the oven.
To make the homemade cream of mushroom sauce, start by melting the butter in the pan over medium heat. Add in the chopped mushrooms and sliced mushrooms. Cook and stir for 5-7 minutes, until they are just tender.
Stir in the flour, salt, black pepper and thyme. Coat the onions and mushrooms in the flour and spices. Gradually stir in the milk, bring to a boil and continue stirring until the sauce thickens. Turn off the heat and stir in the grated Swiss cheese.
Add the green beans back into the pan and stir to combine. Top with the remaining grated cheese and place in the oven to bake for 30 minutes, until bubbly and the cheese on top is golden brown.

Cheesy Green Bean Casserole
Ingredients
- 1 1/2 pounds fresh green beans
- 1/2 C chopped onion
- 1/2 pound sliced mushrooms
- 1/2 C butter
- 3 tbsp all-purpose flour
- 1 tsp salt
- 1/8 tsp ground black pepper
- 1/8 tsp ground thyme
- 1 1/3 C 2% milk
- 1 1/2 C Swiss cheese shredded
Instructions
- Preheat oven to 350°F
- Cut off ends of green beans and slice in half. Cook green beans in boiling water until just tender, about 7-10 minutes. Drain and set aside.
- In a large skillet over medium heat melt butter add in chopped onion and mushrooms and cook and stir until tender, about 5-7 minutes.
- Stir in flour and spices until well combined. Gradually stir in milk and bring to a boil until thick, stirring frequently
- Once it has thickened, remove from heat and blend in 1 cup of the shredded Swiss cheese
- Mix in the cooked green beans and turn into a shallow baking dish, if you don't have an oven safe skillet. Sprinkle with remaining 1/2 C of shredded Swiss cheese.
- Bake uncovered until heated through, about 30 minutes.
