Chocolate Cake Mix Cookies
Chocolate cake mix cookies are just too easy to make, you just dump the box of cake mix in a mixing bowl with a few other ingredients, bake and your cookies are done.
There are so many different ways to make these cookies, but this Chocolate Peppermint Cookie Recipe is by far one of our favorites! Everyone always wants this recipe when I make these cookies so it is about time I got this one written out!
Making Chocolate Peppermint Cookies
This simple Christmas Cookie Recipe starts by combining the Devil’s Food Cake Mix, flour, eggs, oil and peppermint flavor in the bowl of a stand mixer or in a large mixing bowl. Mix until a soft dough is formed.
I like to use a cookie scoop to form the cookies into equal sized dough balls. Place the scooped cookie down on a baking sheet spaced about 2 inches apart. The cookies will spread out a little bit while they are being baked.
Bake the cookies in a 350ºF oven for 8-10 minutes, until the are cooked through. You can’t really look for golden edges on these dark cookies, so just cook the cookies until the cookies have spread out and the dough is firm and cooked through.
Remove from the oven and cool completely on a cooling rack.
White Chocolate Frosting
For this easy chocolate cake mix cookie recipe, topping with melted white chocolate is so easy and so yummy!! Simply place one cup of white chocolate chips into a microwave safe bowl, microwave for 30 seconds.
Give it a stir and place back into the microwave for another 30 seconds, until the chocolate is melted and smooth.
Top each cookie with about 1 tablespoon of melted white chocolate. Drop with a spoon onto the cookie and then use the back of the spoon to smooth the chocolate over the top of the cookie.
While the chocolate is still melted sprinkle crushed candy cane on top of each cookie.
How to Store Chocolate Cookies
Store cookies in an air tight container for up to 3 days. Once the chocolate has cooled completely these cookies can be stacked on top of each other to store in a cookie jar or stack as a gift.
These cookies can also be frozen for up to 2 months in an air tight container or zip top freezer bag. Allow to thaw on the counter before serving.
