Fresh Peach Recipes
At the top of my favorite summer fruits list will always be a fresh peach. They are delicious on their own, or beautiful when incorporated into both sweet and savory dishes. Picking out the perfect peach can be a little tricky sometimes.
What you want to look for when buying peaches for this recipe is a freestone variety, one that the pit removes easily from the flesh. I like to use a Summer Gold or Lemon Alberta, usually yellow peaches. Whichever variety you choose, look for a freestone or even semi-freestone for easy slicing.
In addition, you will want the peaches to be just ripe, not too soft or too hard. Look for peaches that just barely indent when pressed with a thumb or finger. These will be easier to slice and remove the pit.
Ingredients for Fresh Peach Crumb Bars
Making peach crumb bars is super easy, just like making cookie dough. This recipe needs just a few basic ingredients to make it sweet, buttery and delicious. To make peach bars you will need:

Preparing Peach Crumb Bars
Let’s walk through the simple steps, while adding in a few tips, to making these tasty Peach Crumb Bar. This recipe is easy to put together and then the hardest part is waiting for them to bake and cool before you can dig in!
To make peach crumb bars, start by first, peeling the peaches, removing the pit and slicing into small cubes.
Then, in a large bowl, combine the peaches, cornstarch, lemon juice and 1/2 cup of sugar. Just toss the peaches until they are all covered in the mixture and let them sit until you are ready to use them.
Next, make the crumb crust and topping. To make the crust combine the flour, sugar, salt, baking powder, cinnamon and nutmeg in a large mixing bowl. I like to use a whisk to break up any clumps and combine the dry ingredients.
Then you are going to add in the cold butter. An easy way to do this is to use a box grater or cheese grater to add small pieces of butter to the dry ingredients, then use your hands or a pastry knife to combine until it is sand like.
Lastly mix in the egg and vanilla until it is well combined. It will resemble dry sand.
Then press half of the crumb mixture evenly into the bottom of a 9 x 13 inch baking dish that has been sprayed with baking spray.
After you have pressed the bottom crust into the pan pour the peaches over the crust. Then sprinkle the remaining crumb mixture evenly over the top of the peaches.
Bake the peach crumble bars for 35-40 minutes, until the crust on top is golden brown and the peaches are cooked down.
How to Store Peach Crumb Bars
If you have leftover peach crumb bars. Store in an air tight container or zip top bag in the refrigerator for up to 4 days.
These can also be frozen in an air tight container for up to 3 months. Thaw in the refrigerator or on the counter.

Peach Crumb Bars
Ingredients
- 5 cups yellow peaches peeled and diced
- 3 tablespoons cornstarch
- 2 tablespoons fresh lemon juice
- 1 1/2 cups sugar divided
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup butter cold
- 1 egg
- 1 teaspoon vanilla
Instructions
- Preheat oven to 375º F, prepare a 9 x 13 inch baking dish with cooking spray
- In a mixing bowl combine diced peaches with cornstarch, lemon juice and 1/2 cup of sugar. Toss to coat.
- In a large mixing bowl whisk together the flour, baking powder, 1 cup sugar, salt, baking powder, cinnamon and nutmeg.
- Grate the cold butter into the dry ingredient mixture and mix together with clean hands or a pastry knife until a sand like mixture. Add in the egg and vanilla and stir to combine.
- Press half of the crumb mixture evenly into the bottom of the prepared baking dish.
- Pour the peaches over the bottom crust and then sprinkle the remaining crumb mixture over the top of the peaches.
- Bake for 35-40 minutes, until the top is golden brown and the peaches have cooked down. Cool completely before slicing.
