Beef Tenderloin Oven Recipe

We love this beef tenderloin oven recipe because it is so tender and juicy. Made with just the right amount of spices and butter, every bite is bursting with delicious flavors.

Making beef tenderloin at home in the oven is such a great way to have an expensive restaurant experience with the whole fam without breaking the bank.

Beef tenderloin can be a bit pricey to purchase from the grocery store, but once you taste it, you will know why. This is a great dish to serve at Holiday parties and family get togethers. Everyone will be delighted by this simple, yet elegant cut of beef.

Beef Tenderloin Seasoning

The seasoning for this beef tenderloin recipe is simple, but really packs a punch with every bite.

For this easy beef tenderloin, we use salt, black pepper, garlic powder, onion powder and then fresh herbs like thyme and rosemary.

Tip: It is best to be generous when seasoning the beef tenderloin to make sure you can taste it with every bite, it compliments the beef perfectly.

Preparing Beef Tenderloin for Cooking

  • Make sure your beef tenderloin is trimmed of any excessive pieces of fat, you can also ask your butcher to do this when you purchase the tenderloin
  • If your tenderloin is thick on one end and thinner on the other, fold over the thinner end and tie with some kitchen twine to make the roast a more even size so that it will cook evenly.
  • Take tenderloin out of the refrigerator at least one hour before cooking to bring it up to room temperature
  • Season on all sides, pressing the seasonings into the meat to be sure it sticks while cooking

Oven Roasted Beef Tenderloin

To roast beef tenderloin in the oven start by bringing to room temperature, then when you are ready to cook, season liberally on all sides with the spice mixture.

Next, place a cast iron skillet or other heavy skillet on the stove top over high heat. Pour in the olive oil, or other cooking oil, and place the roast into the pan. You are just going to brown the roast on all sides equally.

This will take about 1-2 minutes per side. Stay near the pan as it cooks so that you don’t burn the outside of the tenderloin. Flip it over and repeat until every side has been browned.

How long to Roast Beef Tenderloin in Oven

Once the beef is browned on all sides, place it on a baking rack that has been placed over a foil lined baking sheet. You can also use a roasting pan with a rack if that’s what you have.

How long you roast the beef tenderloin will depend on the thickness and desired doneness of the tenderloin. We like to eat our beef tenderloin cooked to medium rare, it is so tender at this point, but definitely cook it to your family’s liking.

The best way to determine when your tenderloin is done, is to use an instant read thermometer. This will tell you exactly when to take the tenderloin from the oven.

To measure the internal temperature of the beef tenderloin, stick an instant read thermometer into the thickest part of the meat. The following are the temperatures you are looking for:

Beef Tenderloin Cooking Temperatures

  • Rare: cool red center 125º F
  • Medium Rare: warm red center 135º F
  • Medium: warm pink center 145º F
  • Medium Well: slight pink center 150º F
  • Well Done: no pink center 160º F

Take the tenderloin from the oven and allow to rest for 5-10 minutes before slicing. I would say the longer the better for this cut.

While the roast is cooking or even while it rests, melt the butter in a pan and add in the garlic, thyme and rosemary. Cook and stir for 1-2 minutes until it is fragrant.

Discard the thyme and rosemary stems, then brush or pour the butter mixture all over the outside of the roast. Don’t skip this step, this adds so much delicious flavor!

Ingredients

  • 2-3 pounds beef tenderloin room temperature
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil
  • ½ cup butter
  • 2 garlic cloves minced
  • 1-2 sprigs fresh thyme
  • 1-2 sprigs fresh rosemary

Instructions

  • Preheat oven to 425℉. Place a baking rack inside a foil lined baking sheet.
  • Combine sea salt, black pepper, garlic powder and onion powder.
  • Season roast liberally on all sides.
  • Place a skillet over high heat, heat oil to simmering. Brown roast on all sides 1-2 minutes.
  • Place roast onto the baking rack. Cook in the oven for 20-30 minutes depending on thickness of roast and desired doneness. Check the roast internal temperature for doneness. See notes for temperatures.
  • Remove the roast from the oven and allow the roast to rest 5-10 minutes before slicing.
  • While the roast is resting, in a pan over medium heat, melt the butter and add in the garlic, thyme and rosemary sprigs. Cook 1-2 minutes until fragrant. Discard the thyme and rosemary sprigs.
  • Brush the butter mixture all over the roast, then slice into desired slices
