How to make Butternut Squash Pasta Sauce

Butternut sauce recipe can be made all in one pan, making it perfect for a busy weeknight meal. Let’s walk through the simple steps to make creamy butternut pasta sauce.

  1. Prepare the Butternut Squash: start by carefully cutting off the top and bottom of the squash, then peel it using a sharp kitchen knife. Slice it into two halves, top and bottom. Cut the bottom half of the squash into two halves, then scoop out the seeds from the inside of the squash. Lastly, cut the squash into smaller pieces.
  2. Cook the Squash: Place the chopped squash pieces, diced onion, minced garlic, and chicken broth into a pan with a lid. Season with salt, and black pepper. Bring the broth to a boil, turn the heat to medium, cover with a lid, and cook until the squash is soft when poked with a fork. This will take about 7 minutes.
  3. Blend the Butternut Squash: When the squash is done cooking, add in the butter, thyme, and nutmeg. Cook for an additional 30 seconds. Use an immersion blender or stand blender to process the squash until it is smooth and no more lumps are in the sauce. Place the squash back into the pan once blended.

Ingredients

  • 1 medium sized butternut squash
  • ½ cup diced onion
  • 2 garlic cloves
  • 1 cup chicken broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme leaves
  • ¼ teaspoon ground nutmeg
  • ½ cup heavy cream
  • 1 cup parmesan cheese shredded
  • reserved pasta water as needed
  • 1 pound fettuccine

Instructions

  • Cook the pasta according to the package instructions.
  • Using a sharp kitchen knife, remove the outside skin of the squash
  • Remove the top and bottom of the squash with a sharp knife, slice the squash into two halves, top and bottom and thne slice the halves in half again lengthwise.
  • Remove the seeds with a spoon. Then chop the flesh of the squash into 1/2 inch cubes.
  • Put chicken broth, chopped squash, onion, garlic, salt and pepper into a pan. Cover and boil over medium-high heat for 5-7 minutes, stirring occasionally until the squash is tender.
  • When squash is done cooking, add one tablespoon butter, thyme leaves, and nutmeg and cook and stir for 30 seconds.
  • Using an immersion blender, blend the squash until smooth. A stand blender can also be used.
  • Pour in the heavy cream. Bring to a simmer, cook and stir until desired consistency, adding pasta water as needed.
  • Turn off the heat and stir in grated parmesan cheese.
  • Fold in the cooked pasta and enjoy!
