Flank Steak is a go to for our family meals. It is perfect for a quick weeknight meal, feeds the whole fam with one steak and is totally satisfying. This simple recipe for cast iron cooked flank steak is easy enough for the beginner cook and flavorful enough for the experienced chef. I suggest even getting the kids in the kitchen to learn how to make this simple meal, this is one they can totally help with.
We love cooking with flank steak because it is a lean cut of beef that is pretty versatile, we use flank steak for simple Tacos, throw into a marinade for a ton of extra flavor and tenderness or just cook up quick and serve alongside a simple salad or Garlic Broccoli.
How to cook Flank Steak
Cooking flank steak in a cast iron pan is simple and quick all you need in a few spices that you probably already have on hand. Follow these simple steps for perfectly cooked, juicy steak every time!
- Start by preparing your flank steak. Remove the steak from the refrigerator at 10 minutes before cooking to allow it to come up in temperature.
- Place a cast iron skillet or grill pan over medium high heat and allow to heat up while you prepare the flank steak.
- Combine together sea salt, black pepper, garlic powder and onion powder. Liberally season the steak on both sides with the spice mixture.
- Pour olive oil or other cooking oil into the cast iron pan.
- Place the steak into the pan and allow to cook for 5-7 minutes on each side. Only turn the steak once. Cook the steak to desired temperature, check the doneness with a good instant read thermometer. This will ensure your steak is cooked perfectly!
- Once the steak has reached the desired temperature place the butter on top of the steak and allow to melt down into the pan. Add in the garlic and thyme and cook for 30 seconds.
- Remove the steak from the pan and drizzle the garlic butter over the steak
- Allow the steak to rest on a cutting board for at least 10 minutes before slicing.
Flank Steak Temperature
The best way to tell if your steak is cooked perfectly is by checking the temperature of the steak with an instant read thermometer. Simply stick the thermometer probe into the thickest part of the steak to check the temperature. The following will help you know at what temperature your steak will be done:
- Rare: 115ºF
- Medium Rare: 125ºF
- Medium: 135ºF
- Medium Well: 140ºF
- Well Done: 150ºF
For my family I cook the steak to 135º F, even though I would actually prefer to pull it at 125º F, my family likes it a little more well done. Got to make everyone happy!! 😃

Cast Iron Flank Steak
Ingredients
- 1.5-2 pounds flank steak
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, minced
- 2 sprigs thyme
Instructions
- Remove flank steak from refrigerator 10 minutes before cooking.
- Place cast iron pan over medium high heat and allow to heat up
- While the pan is heating, combine the sea salt, black pepper, garlic powder and onion powder. Season the steak on both sides with the spice mixture.
- Pour in the olive oil and place the flank steak into the pan.
- Cook for 5-7 minutes per side, depending on desired doneness. Check internal temperature with an instant read thermometer.
- When steak has reached the desired temperature, place the butter on top of the steak and allow to melt down. Add the garlic and thyme to the pan and cook for 30 seconds, until fragrant.
- Remove the steak from the pan to a clean cutting board. Pour the butter over the steak. Allow to rest for at least 10 minutes before slicing.

How to Slice Flank Steak
I’m am sure you have heard the saying ‘Slice against the grain’ and maybe that makes absolutely no sense to you. Here’s just a little visual to help you with slicing that beautiful flank steak you just finished cooking. Slicing the flank steak against the grain plays a huge part in how tender the steak will be. Cut it the wrong way and everyone will just be chewing all night on a really tough piece of meat.
To slice the flank steak you will want to slice it against the grain. If you are looking at the piece of flank steak, you can see the muscle fibers (grain) that goes from top to bottom on the steak. Slice the steak into thin pieces from one side to the other, against the grain. Flank steak is also best sliced into thin slices.
