Twice Baked Potatoes are a simple, classic recipe that has been on the fam menu for years…and they still beg for these to be made all the time. How can you go wrong with mashed potatoes, sour cream, bacon and cheese?! They are such a delicious combination, add some melted cheese on top and these are perfection. So easy to make!

Ingredients for Twice Baked Potatoes
For this easy twice baked potato recipe you will need the following simple ingredients, items you probably already have at home.
- Baking Potatoes- For this recipe you will want potatoes that are 4-5 inches long. The potatoes should be large enough to be able to slice in half and then stuff with the mashed potatoes.
- Olive Oil- used when baking the potatoes to make the outside skins nice and crisp
- Sea Salt- for the outside skins of the potatoes to add a little flavor while baking
For the Twice Baked Potato filling:
- 1/4 cup butter- adds a ton of flavor and a bit of liquid
- 1 cup sour cream- helps to fluff up the potatoes in this recipe and adds that delicious sour cream flavor
- 1/2 cup milk- adds some moisture to the potatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 cup sharp cheddar cheese, shredded
- 6 pieces of cooked bacon
- green onions for garnish
How to make Twice Baked Potatoes
These are the steps to making these delicious Baked Potatoes. For a printable recipe, scroll down to the recipe card.
- Start by cleaning the potatoes, pat dry with a clean kitchen towel or paper towel. Rub the outside of the potatoes with olive oil and season with sea salt. Bake on a baking sheet in a 400º F oven for 40 minutes, or until a fork easily slides into the potatoes. For step by step baking instructions check out my baked potatoes recipe.
- Once the potatoes are done baking, allow to cool for a few minutes so you can hold them. Slice the potatoes in half and remove the flesh from the inside of the potatoes, place into a large mixing bowl.
- Place the potato skins back onto the baking sheet, cut side up
- In the bowl with the potato flesh add in the butter, sour cream bacon pieces, shredded cheese, milk and spices.
- Using a potato masher or an electric mixer, combine the ingredients until the potatoes are smooth and creamy and all of the ingredients are well combined.
- Spoon the mixture back into the potato skins on the baking sheet. This can be done by using two spoons to scoop the mashed potatoes out of the bowl and into the skins or the mashed potato mixture can even be placed into a piping bag and piped into the skins.
- The skins can be overstuffed with the mashed potato mixture. If they are falling over, just set them next to each other to help them stay standing upright.
- Top the stuffed potato skins with the remaining shredded cheese and place back into the oven and bake for an additional 15-20 minutes, until the potatoes are heated through and the cheese is melted and bubbly on top,
- Garnish with sliced green onions if desired.

Twice Baked Potatoes
Ingredients
- 6 baking potatoes
- 1 tbsp olive oil
- 1 tsp sea salt
- 1 cup sour cream
- 1/2 cup milk
- 1/4 cup butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 cup sharp cheddar cheese, shredded
- 6 slices slices of bacon, chopped
- 2 green onions
Instructions
- Preheat oven to 400º F
- Rub the outside of the clean potatoes with olive oil and season with sea salt. Place on a baking sheet and bake for 40-60 minutes until a fork easily inserts into the potatoes
- Allow the potatoes to cool until they can be handled. Slice the potatoes in half and remove the flesh from the inside of the potatoes with a spoon leaving a little rim of flesh on the inside of the skins. Place the flesh into a large mixing bowl and the skins back onto the backing sheet.
- To the flesh add in the sour cream, milk, butter, spices, 1/2 cup of the shredded cheese and bacon bits.
- Use a potato masher or electric mixer to combine the ingredients until the potatoes are smooth and no lumps remain.
- Spoon the mashed potato mixture by heaping spoonfuls back into the skins of the potatoes.
- Top with the remaining cheese and bake for an additional 15-20 minutes, until the cheese is melted and the potatoes are heated through. Top with sliced green onions
